Weekend recipes: Arroz con Pollo

In a panic about what to serve this weekend, I dug through my recipe collection and decided to serve some I haven't done in awhile (or try for the first time!). Birthday dinner was Arroz con Pollo, from the Dream Dinners cookbook by Stephanie Allen and Tina Kuna. I love this cookbook!

1 cup uncooked white rice
1 15 oz. can black beans drained
1cup frozen corn kernels
6 4 oz. chicken breast halves (I like to slice the chicken instead of using breasts)
1tsp garlic salt
1/4 tsp black pepper
1/2 cup chicken broth
1 cup salsa
1 cup marinara sauce
1/2 cup red bell pepper sliced
1/2 cup scallion sliced
1/4 cup fresh cilantro chopped
1/4 tsp ground cumin
1 tsp minced garlic
1 cup shredded cheese (cheddar)

Preheat oven to 350 F
Spray 9X13 pan with nonstick cooking spray.

Prepare rice according to the package directions. Spread the rice over the bottom of the prepared baking dish. Layer the beans, corn and chicken over the rice and sprinkle with salt and pepper.

In a large bowl combine the chicken broth, salsa, marinara sauce, bell peppers, scallions, cilantro, cumin, and garlic and mix thoroughly. Pour the mixture over the chicken and sprinkle cheese over the top.

Bake for 45min-1hr until the internal temp of the chicken reaches 165F.
